sticky Szechuan tofu

This is a tofu marinade I was taught at a cooking class, good for filling rolls or buns.

ingredients

  • 300 g firm tofu, cut into 1 cm slices
  • thumb of ginger, grated
  • 0.5 cup reduced salt soy sauce
  • 2 tbsp black vinegar
  • 2 tbsp brown sugar
  • 2 tsp Szechuan peppercorns, crushed
  • 1 tbsp oil for frying

method

  1. Mix ginger, soy sauce, vinegar, sugar and Szechuan peppercorns in a bowl, until sugar dissolves.
  2. Allow tofu to marinade for at least 15 minutes, longer the better.
  3. Heat a large frying pan over medium heat.
  4. Remove the tofu from the marinade and fry in the oil for 2 minutes each side.
  5. Pour the remaining marinade into the pan and cook for another 2 minutes until thickened.
