This is a tofu marinade I was taught at a cooking class, good for filling rolls or buns.
ingredients
- 300 g firm tofu, cut into 1 cm slices
- thumb of ginger, grated
- 0.5 cup reduced salt soy sauce
- 2 tbsp black vinegar
- 2 tbsp brown sugar
- 2 tsp Szechuan peppercorns, crushed
- 1 tbsp oil for frying
method
- Mix ginger, soy sauce, vinegar, sugar and Szechuan peppercorns in a bowl, until sugar dissolves.
- Allow tofu to marinade for at least 15 minutes, longer the better.
- Heat a large frying pan over medium heat.
- Remove the tofu from the marinade and fry in the oil for 2 minutes each side.
- Pour the remaining marinade into the pan and cook for another 2 minutes until thickened.
