Tofu Scramble

My go-to breakfast.

Ingredients

  • 1 small onion, sliced
  • 300 g firm tofu, crumbled into small/medium chunks
  • Olive oil, as needed
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp ground tumeric
  • 1/2 tsp kala namak (black salt)
  • 2 tbsp nooch
  • 1 tbsp tahini
  • 100 mL soy milk
  • Black pepper, to taste

Method

  1. Add some olive oil to a medium pot over high heat. Fry the onions until soft.
  2. Add the tofu and fry until browned, stirring occasionally to avoid burning the onions.
  3. In a bowl, combine the remaining ingredients. Pour into the pot and mix well.
  4. Let the mixture simmer, until desired consistency.
  5. Enjoy with some freshly ground black pepper.

Notes

  • I like to top mine with a small can of marinated beans. I usually find these at the supermarket for about $1 each.
