My go-to breakfast.
ingredients
- 1 small onion, sliced
- 300 g firm tofu, crumbled into small/medium chunks
- Olive oil, as needed
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp ground tumeric
- 1/2 tsp kala namak (black salt)
- 2 tbsp nooch
- 1 tbsp tahini
- 250 mL soy milk
- Black pepper, to taste
method
- Add some olive oil to a medium pot over high heat. Fry the onions until soft.
- Add the tofu and fry until browned, stirring occasionally to avoid burning the onions.
- In a bowl, combine the remaining ingredients. Pour into the pot and mix well.
- Let the mixture simmer, until desired consistency.
- Enjoy with some freshly ground black pepper.
notes
- I like to top mine with a small can of marinated beans. I usually find these at the supermarket for about $1 each.
